    1 1/2 c. Ralston 100% Wheat Hot Cereal
    1 c. flour
    1/4 c. brown sugar
    1 1/2 tsp. baking soda25 tsp. salt
    1/2 tsp. pumpkin pie spice
    1 tsp vanilla
    1. egg
    1 c. pumpkin, cooked and mashed
    2/3 c. honey
    1/3 c. milk, skim
    1/2 c. canola oil


These freeze well! Easy to substitute banana for the pumpkin. Just change the pumpkin pie spice to cinnamon.j


Preheat oven to 375. In large bowl, combine dry cereal, flour, brown sugar, baking soda, salt, and pumpkin pie spice. In small bowl, combine egg, pumpkin, honey, milk, oil, and vanilla. Add to flour mixture, stirring just until moistened. Using a 1/3 measuring cup, fill muffin tin. Bake 16 minutes. Brush warm muffins with honey.
