    Blackened Seasoning
    Redskin Potatoes
    Olive Oil
    Hard Boiled Eggs
    Red Onion
    Green Beans
    Grape Tomatoes (halved)
    Dijon Mustard
    Cider Vinegar
    Lemon Juice


Boil redskins and allow to cool, when cooled quarter. Boil and slice eggs, peel and slice into quarters. Lightly blanch green beans. Half the grape tomatoes, chop parsley. Slice red onion into thin strips. In skillet heat 1 tablespoon oil, rub 1 side of tilapia with the blackned seasoning and place it face down in hot oil cook 4-5 minutes and flip to other side for an additional 4-5minutes, allow to cool. In a large bowl add the arugula, potatoes, green beans, red onion, parsley, capers and eggs. In blender mix: dijon mustard, vinegar, lemon juice and garlic (S&P if desired) slowly adding in oil. Add dressing to arugula mix and add cooked and cooled tilapia, toss.
