    2/3 cup Flour
    1/3 Cup Whole Wheat Flour
    1 tsp Baking Powder
    1/2 tsp Salt
    1 1/4 Cup Brown Sugar
    1/4 Cup Canola Oil
    2 Tbsp Skim Milk
    2 Large Eggs
    1 Cup Roasted Crushed Macadamia Nuts
    1 Cup Semi-Sweet or Dark Chocolate Chips
    3/4 Cup Dried Tropical Fruit (Pineapple & Mango)
    1/2 Cup Flaked Sweetened Coconut
    Cooking Spray
    2 tsp Flour


You can add a few more nuts or chocolate chips if you prefer.


Preheat Oven to 350 degrees.
Coat a 13x9 Baking Pan with Cooking Spray & dust with 2 teaspoons of flour.
Combine flours, baking powder & salt in a small bowl & stir. Combine sugar, oil, milk, and eggs in a large bowl and mix until smooth. Blend in the flour mixture then fold in fruit, nuts, and chocolate chips. Sprinkle with coconut & bake for 20 minutes or until golden.
