    2 lbs green beans
    1 Tbsp olive oil
    1 Tbsp light butter
    1/2 cup finely chopped onion
    2 (8oz) pkgs mushrooms
    2 Tbsp flour
    1 cup milk, warmed
    1 tsp fresh thyme
    pinch cayenne


Cook green beans until crisp tender. Cook onion in oil and butter until golden and tender. Stir in mushrooms, salt and pepper. Cook 8 minutes or until juices have realeased and evaporated. Add flour and cook 2 minutes. Slowly add milk while stirring. Heat to boiling and cook a couple minutes until thickened. Stir in thyme, cayenne and salt/pepper to taste. Spoon over green beans.
