Introduction

These pancakes are light and fluffy, are just sweet enough that you don't need the syrup and even if you add the syrup, it wont be too much. Fun and easy to make. Number of Servings: 5

Ingredients

    1 cup milk (skim)
    1 cup floor
    1 egg
    1 tbsp sugar
    0.5 tsp salt
    1.5 tsp baking powder
    1 tbsp butter (unsalted -- softened but not melted)
    1 tsp vanilla extact or some liquor

Directions

Put all of the ingredients in a blender till everything is well blended together. Do not mix too much -- just want the items blended together.

Spray the griddle with cooking oil or wipe with papertowel soaked with oil. (You want the pan greased but not with oily spots.)

Pour 2-3 inch rounds, with enough space that as the batter spreads, it does not run into its neigher. As soon as bubbles appear and you are able to flip the pancake, flip it. Each on takes a few minutes -- depending on how browned you want it.

Remove from heat and serve -- or munch.

Serving Size: 25 2-3 inch silver dollar like pancakes
