This zucchini inspired "spaghetti" makes a quick, light meal. This zucchini inspired "spaghetti" makes a quick, light meal.
Number of Servings: 1


    For each person...
    1 small zucchini (about 200 grams)
    1/2 cup of your favourite jarred pasta sauce (I use Classico Sweet Basil)
    3 basil leaves or 1/4 tsp dried basil


On a plate, shred zucchini lengthwise into long strips with a vegetable peeler.
Cover and microwave on high for 1-2 minutes.
Mix basil into pasta sauce and microwave to heat.
Pour sauce over zucchini.
Top with grated Parmesan cheese.

Serving Size: Makes 1 2 cup serving
