An Italian chopped salad minus the meat. An Italian chopped salad minus the meat.

    3 heads iceberg lettuce, chopped
    4 bunches green onioins, chopped
    8 roma tomatoes, sliced and chopped
    2 cans garbanzo beans
    1 bag italian shredded cheese or mozzarella

    2 tbsp sugar
    2 tsp dried basil
    1 tsp salt
    1 tsp pepper
    2 tbsp lemon juice
    1 tbsp dijon mustard
    2 tbsp red wine vinegar
    2 tbsp basalmic vinegar
    5 tbsp extra virgin olive oil
    5 tbsp peanut oil (could be subbed for canola or vegetable oil)


Chopped salad ingredients and put in bowl along with cheese and garbanzo beans.

Mix all salad dressing ingredients, pour over salad and toss.

Serving Size: Serves 8 salad bowls
