Ingredients

2 serving hormel pepperoni
1/2 cup pizza sauce
1 cup shredded mozzarella cheese
1/4 cup chopped red onion
1 large egg
1/2 cup Parmesan cheese
2 cup riced cauliflower
1/2 tsp salt
1 tbsp Italian seasoning
1 tbsp minced garlic
Black pepper to taste
Directions
1. Cut cauliflower into small pieces and process in food processor until it looks like rice
2. Squeeze as much moisture out as possible using cheese cloth or dish towel
3. Microwave for 5 min (DO NOT ADD WATER or COVER)
4. Squeeze more of the moisture out of the cauliflower after microwaving using cheese cloth or dish towel.
5. Combine cauliflower, egg, Parmesan cheese, 1/2 of the shredded cheese, Italian seasoning, garlic, and salt. Combine thoroughly (should look like pizza dough and smell awesome).
6. Spray cookie sheet and make 8 round pizzas on a cookie sheet. Spread "dough" fairly thin
7. Bake at 450 for 12-15 min (until lightly browned).
8. Add pasta sauce, pepperoni, and cheese to each pizza. (Add other topping you like).
9. Broil until cheese melts (5 min)
