    Sweet potato, 8
    Milk, 2%, 1.5 cup
    Butter, unsalted, 3 tbsp
    Nutmeg, ground, 1 tbsp
    Marshmallow Candy, 40 miniatures


Preheat oven to 375 degrees. Wash, peel and cut sweet potatoes. Place them in a large pot filled with cold water. Bring pot to a boil, reduce to a simmer for 15-20 minutes or until potatoes are tender. Drain water from potatoes, then return to the pot. Mix in butter, milk and nutmeg using a hand mixer until smooth. Adjust seasoning to taste. Place sweet potatoes into a 2qt baking pan. Place pan in oven for 10 minutes. After potatoes are heated throughout add marshmallows to the top. Coat the entire top. Place back in the over for an additional 5 minutes. Remove when marshmallows are golden brown.
