    2 Chicken Breasts, cubed
    1 1/4 cups potatoes, diced
    3/4 cup shiitake mushrooms
    1 cup tomatoes, chopped
    1 cup onions, chopped
    4 large eggs
    1 tsp salt
    2 tablespoons olive oil
    2 Tablespoons Thyme


Preheat the broiler to medium-high

Place the potatoes in a microwave-safe bowl and microwave on HIGH for 3 minutes.

Meanwhile, put the oil in a 9 inch skillet and heat over medium-high. Add the shiitakes, onions, and chicken breasts and cook for 3-4 minutes, stirring frequently. Once the chicken has browned, add the potatoes. Brown for 3 minutes, stirring often. Add the tomatoes, salt, and thyme. Cook for 2 minutes and place into 4 ramekins and crack one egg into each.

Broil for 5-10 minutes.
