    Tart Apples (pink lady or granny smith)
    Lemon juice
    Green Onion
    Pineapple Juice
    Curry Poweder
    White Balsamic Vinegar
    Olive Oil
    Dijon Mustard


Cook barley according to instructions allow to cool completely. In preheated 350degree oven toast shredded coconut for 5mins or until light brown, set aside to cool. Dice Apples and soak in Lemon Juice. Dice Celery and Green Onion & parsley. In a blender mix: Pineapple juice, dijon mustard, curry, vinegar, S&P; slowly adding in oil. In a large bowl add barley, celery, green onion, blueberries, apples, parsley, coconut and pineapple vinaigrette, toss to coat.
