Ingredients

    1 medium sweet onion, sliced
    1 cup sliced mushrooms
    1/2 red pepper, diced
    olive oil cooking spray
    dash salt
    5 eggs
    1/4 cup Almond Breeze Unsweetened Original Milk
    1/4 tsp garlic powder

Directions

Spray your skillet with the olive oil spray. Add the onion, mushrooms, and red pepper. Cook until the onion is soft and translucent. While that cooks, beat the eggs with the almond milk and garlic powder. Pour the egg mixture over the vegetables and bake in a pre-heated 350* oven for 20 minutes or until eggs are set.
