Very flavorful blackened chicken. Very flavorful blackened chicken.
Number of Servings: 4


    2 1/2 t. paprika
    1 t. minced dried onion
    1 t. minced dried garlic
    1/4 t. oregano
    1/4 t. basil
    1/4 t. white pepper
    2 boneless, skinless chicken breast
    2 t. olive oil


Mix together all seasonings to make a dry rub in a flat bowl. Cayenne pepper can be added to taste.
Trim chicken, rinse and place on paper towel.
Heat large skillet with olive oil.
Place chicken in rub, then into skillet.
Brown well, so its similar to blackened.
Spray side with Pam if needed before turning chicken over.
Brown approx. 5 minutes on each side, cover for a few minutes to cook inside.
