    *Flour, Pillsbury Best All Purpose Enriched Bleached White 5lb/2.26kg Bag (.25Cup/31gm), 1.33 cup (take out 1 tb for cream cheese filling)
    *Garden of Life RAW protein, 1 serving
    *Great Value Egg White, 15 tbsp (take out 3 tb for cream cheese filling)
    *Libby's pure pumpkin, 2 cup
    *Great Value Egg Substitute, 0.25 cup
    Granulated Sugar, .5 cup
    Baking Soda, 1.5 tsp
    *Southern Home Cream Cheese Fat Free, 16 tbsp
    Cinnamon, ground, 1 tsp
    *Pumpkin Pie spice, 1 tsp
    Vanilla Extract, 1 tsp


Mix together cream cheese, required flour and egg whites, and vanilla until smooth. Set aside. In another bowl combime remaining ingredients. Fill 18 muffin molds with 1 tb of pumpkin mix. top with 1 tsp of cream cheese mix, then another tb of pumpkin mix. Bake 350 for 30 minutes or until toothpick comes out clean.
