    3 T Smart Balance Spread
    1/2 Onion, medium
    3 White Potatoes
    3/4 C Chopped Celery
    2 C Sliced Carrots
    2 C Corn Kernels
    2 t Salt
    1/8 Ground Black Pepper
    3 C Milk, nonfat
    1/4 C Cold Water
    1/4 C Cornstarch


Melt spread in large saucepan over medium heat. Add onion and cook until tender.

Add carrots and celery and cook for 10 minutes or until carrots become a little tender. Add broth, potatoes, corn, salt and pepper. Bring to a boil and allow to simmer for 25 to 30 minutes or until all vegetables are tender.

Add milk and heat just to boiling.

IN a separate bowel, stir cornstarch into cold water. When completely dissolved , add to hot soup, stir and serve.

Serving Size: Makes 8 one cup servings
