    1 whole chicken, about 4 lbs
    2 cups water

    10 oz mixed vegetables
    2 cans cream of celery soup (chicken or mushroom could also be used)

    1 cup Heart Smart Bisquick Mix
    1/3 cup water


Place whole chicken and 2 cups of water in crockpot on low for 8 hours. Remove meat from bones. Put meat in regular pot and add broth from crockpot. Add the frozen mixed vegetables and 2 cans of cream soup and 2 cans additional water, if desired. Stir well to mix. Continue to cook on low until veggies are done.

In the meantime, prepare dumplings: combine 1cup biscuit mix and 1/3 cup water. Mix until desired consistency. Drop by tablespoons into gently boiling soup. Cover and cook for about 10 minutes. This will make 8 to 10 servings of 1 cup each.
