    1/2 c cooked broccoli
    1/4 c chopped parsley
    1/2 c breadcrumbs
    1/4 c fine oat bran
    1/3 c chopped walnuts
    1/3 c chopped apricots
    2 T chicken broth
    2 pork tenderloins (1 Kg)
    1 T black peppercorns
    1 t sage
    1 t rosemary
    1 t thyme
    sea salt


combine first 7 ingredients and set aside.

butterfly the loins and flatten with cleaver. Spoon in stuffing
Fold over and tie with kitchen twine. Sprinkle with dried herbs, pepper and sea salt. Bake in 350 oven for 30 - 40 minutes.

  • Excellent and easier to make then I expected. It can over cook easily so a meat thermometer is very helpfull to avoid it from being too dry. - 5/25/09
