    2 medium sweet, vidalia or red onions, rough chopped
    2 cloves garlic, minced fine
    4 tbsp. butter
    5 slices of cooked, crumbled bacon
    3/4 cup mayo
    3/4 cup sour cream
    4 oz. softened cream cheese
    1 cup swiss cheese, shredded
    1 cup cheddar cheese, shredded

    *** can substitute gryere for swiss, and shredded parmesean for the cheddar, or mix and match...


For extra flavor, use the bacon fat plus 2-3 tablespoons of butter to carmelize onions, instead of the 4 tablespoons of butter. You can reserve some of the crumbled bacon to sprinkle on top before baking.


Pre-heat oven to 350 degrees. Melt butter in large oven safe-skillet over medium heat. Add onions, salt and black pepper to taste, and saute approximately 30 minutes, stirring occasionally, until deep brown and carmelized. Add more butter or olive oil, if seems to dry out. During last 2-3 minutes, add ground thyme and minced garlic and stir. Remove from heat and add remaining ingredients into pan, mixing well. Bake uncovered in oven for 30 minutes, or until golden brown. Serve with toasted baguette rounds, or any hearty dipping cracker.
