Ingredients

    Eggbeaters or Eqqwhites
    Shallots
    Garlic
    Oil
    Spinach
    Mushrooms
    White Wine
    Red Pepper Flakes
    Dry Mustard
    S&P

Directions

In large mixing bowl pour eggbeaters, red pepper flakes, dry mustard, S&P and mix. Preheat oven to 350. In medium heat skillet add oil, then add chopped garlic, shallots and sautee 5 mins, add mushrooms sautee 5 more minutes, add white wine and spinach sautee 2 mins or until spinach starts to wilt. Spray 9x9 baking pan and pour eggbeaters into pan evenly, top with sauteed veggies. Bake approx 25mins or until center is no longer jiggly to touch and a pick comes out clean.
