    1 medium onion, diced
    1 red bell pepper, diced
    3 cloves garlic, crushed
    2 carrots, peeled and sliced
    1 tbsp olive oil
    3 boneless, skinless chicken thighs
    2 boneless, skinless chicken breasts
    Italian seasoning
    1 cup sliced mushrooms
    3 stalks celery, sliced
    1 28 oz. can crushed tomatoes
    4 cups chicken broth
    1 14 oz can lentils


Veggie substitutions would work well in this. Or use different canned beans than lentils for variety.


1. Toss chicken with Italian seasoning, then put in a pan with water and bake at 350 degrees until cooked through.

2. In a soup pot, add olive oil, onion, pepper and garlic and cook until onions are translucent.

3. Add chicken stock and carrots. Cook until carrots are just soft.

4. While carrots are cooking, dice chicken.

5. Add remaining ingredients and cook until all ingredients are hot. Season lightly with salt and pepper if needed (I added a bit more Italian seasoning too, or you could use a flavored can of tomatoes).
