    2 medium courgettes (zuchinni) - grated
    1 Onion diced
    1 medium sweet potato grated
    Whole Wheat Flour, 0.5 cup
    Baking Powder, 1 tsp
    Feta Cheese, .5 cup, crumbled
    1 Carrot grated
    1 large egg, beaten
    .5 cup skim milk
    salt and pepper


Use a non-stick pan or baking paper to prevent sticking.
Keep the heat moderate or the fritters will be cooked on the outside and raw in the middle
If you prefer, these can be cooked in a light oil


Mix all ingredients in a large bowl until just combined

Spray a non-stick pan and cook in batches until golden on both sides

Serving Size: 3 large or 4 medium serves
