Ingredients

    1 C buttermilk
    4-6 oz water
    1 1/2 tsp Kosher salt
    1 egg, large
    4 T honey
    1/4 tsp baking soda
    1/2 tsp cinnamon
    1/4 C flax seed meal
    1 C old fashioned oatmeal, dry
    3 C unbleached all purposed flour
    2 T vital wheat gluten flour
    1 C cranberries, fresh or frozen/thawed
    1/2 walnuts, chopped
    4 tsp bread machine yeast

Directions

1. Add ingredients in order to bread machine
2. Choose dough cycle
3. Add Cranberries & Walnuts 5 min before end of last kneading cycle
4. Let dough rise - Remove and knead 10 times - Form loaf - Let rise in warm place 30-90 min.
5. Pre-heat oven to 350
6. Bake 30-35 min.
7. Remove from oven to wire rack - remove from pan in 10 min. - rest on side on wire rack until completely cool - store in air tight container.


Serving Size: Makes 1 - 4' x 12' loaf or 20 servings
