    Spinach, fresh, 1 cup
    Colby Cheese, 1 slice (1 oz)
    Egg, fresh, 4 large
    Mushrooms, fresh, .5 cup, pieces or slices
    Onions, raw, .25 cup, chopped
    Red Ripe Tomatoes, .5 cup, chopped or sliced
    *Pork Sausage, 1 patty, cooked


Turkey sausage is even lighter.


Cook sausage and remove from the skillet. Sauté vegetables in some of the fat left behind by the sausage. Whisk the eggs and chop the sausage. Add salt and pepper to taste. Add them to your cooked vegetables. Scramble together and top with one once of shredded cheese.
