    2 tins skinless, boneless salmon in water or brine.

    3 cups of mashed potatoes

    seasonings to taste


makes 4 servings
Cook the potatoes and mash them,or use instant mash. Drain the tinned fish and mix with mash. Season to taste. Bake in oven 200 C for 40 mins to 1 hour until browned on top. It's very nice served with tinned plum tomatoes or a salad.

  • Try adding a few dried garlic flakes/powder, salt, pepper and 2 tablespoons of fresh chopped cilantro mixed with the mashed potatoes. The salmon also can be substituted with blanched spinach and soya crumbs cooked in lemon juice added to water, to make it very vegetarian. - 2/12/08
