    2 cups white rice
    2 Tblsp chopped yellow onion
    2 Garlic cloves, chopped
    2 Tblsp olive oil
    1 8oz can tomato sauce
    4 cups water
    6 tsps chicken bullion which = 2 Tbls or 2 cubes
    1 tsp salt, or garlic salt (I could not find on the list)
    1/2 tsp ground cumin
    1/2 cup mixed vegetables (peas, carrots, corn, green beans)


1. Saute chopped onion and garlic in saucepan.

2. Add white rice and cook until light golden brown.

3. While rice is browning, add chicken bullion, salt or garlic salt and ground cumin to the four cups of water. Give it a taste here, sometimes I'll add more cumin or chicken bullion.

4. Once rice is lightly browned add the tomato sauce followed by the four cups of seasoned water. Add vegetables if you choose.

5. Bring to a boil, then cover and simmer for about 30 min.

Serving Size: makes 8 1/2 cup servings
