This is a very creamy rich soup that is decadent without killing your calorie count. This is a very creamy rich soup that is decadent without killing your calorie count.
Number of Servings: 6


    3 medium potatoes cubed (may be peeled or not)
    water to cover potatoes
    1 can 10.75 oz of chicken broth or stock
    1 can 10.75 oz campbells cream of chicken
    1-2 tsp celery seeds to taste
    salt and pepper to taste
    1 cup of skim milk
    6 tbsp of cooked crumbled bacon
    1 1/2 cups of cheddar cheese


You can use precooked bacon crumbles to lessen prep time. Hormel makes a great bacon crumble. You can also make a slurry of flour and skim milk if you like a thicker texture to your soup. My family makes this soup with cornbread for a comforting cool weather meal.


Cover potatoes with water and can of chicken broth, and cook until just tender. While potatoes are cooking, cook and crumble 4-5 pieces of bacon. Set bacon aside. Add cream of chicken soup, salt, pepper, and milk to soup and cook until bubbly. When you serve top each serving with a 1/4 cup of cheddar cheese and 1 tablespoon of bacon crumbles.

Serving Size: makes 6 very generous servings
