    *Canola Oil, 1 tbsp
    Onions, raw, 1 large chopped
    Cabbage, fresh, 1 head, medium (about 5-3/4" dia) shredded
    Chicken Broth, 5 cup (8 fl oz)
    Carrots, raw, 3 medium sliced
    *Potato, raw, 3 large (3" to 4-1/4" dia.) cubed
    Sage, ground, .5 tsp
    Thyme, ground, .5 tsp
    Fine White Wine Vinegar, 3 tbsp
    Smoked Pork Hock ( only to flavor soup), 1 hock--remove before chilling soup.


I had to add a bit more broth to mine, just because I prefer my soup very soupy! So delicious though,you're going to love it!


In a large pot, heat the oil, and cook the onions, stirring occasionally, untill softened about 10 minutes. Add the cabbage and cook about 15 min. Add the chicken broth, potatoes,carrots, ham hock, vinegar, sage, and thyme. Cover and simmer the soup for 50 minutes. Remove from heat and add salt and pepper as desired. Chill for 8 hours, them skim the fat from the top of the soup. Reheat and serve.
