    1.5lbs boneless skinless chicken breasts
    (4T olive oil, 1/4 t salt, 1/4 t pepper-divided, 1T honey,1 T white wine vinegar)
    3 pears
    4 stalks celery, thin sliced
    2 oz. crumbled Rf blue cheese
    1 bag spinach

    6 pita pockets, cut into wedges
    (season salt, cooking spray)


side dish sprinkle pita bread w/ seasonings. Spray w/ cooking spray and bake 3-4 min. at 450. Watch closely.


Place chicken on one side of a large baking pan. Brush w/ olive oil sprinkle w/ salt. Roast 10min. @450. Toss pears W/honey, 2T olive oil & 1/8tsp pepper. Add pears to the other side of baking pan ; roast 15 min or until chicken is done. Combine celery, blue cheese, vinegar, & 1/8 tsp pepper.Divide spinach into 6 servings top evenly w/ chicken, pears & pan sauce. Top with celery mixture.
