    1.5 C Chicken, cooked and cubed or shredded
    .5 C Flour
    .5 C Butter
    .5 C Onions
    .5 C Celery
    .5 C Carrots
    .5 C Peas (or other veggie of choice)
    2.5 C Chicken Broth
    1 Tbsp Thyme
    Salt and Pepper to taste
    2 pie crusts


This takes a while to prepare and make. You can make the filler one day and cook the pie the next.


Start by cooking the chicken and chopping the veggies.
Heat the Chicken Broth in a small pot.
In a separate large pot or dutch oven, melt butter over medium heat.
Add the flour, and create a roux - about the color of hummas.
Add veggies and cook about 7 minutes, being careful not to smash the peas.
Add heated chicken broth; simmer for 10 minutes; the flour with thicken the broth.
Add chicken and set aside to cool, about 30 minutes.
In the meantime, you can make a pie crust - or if you are using a premade crust, relax.
Preheat the oven to 325.
Pour the mixture into one of the pie crusts. Place the other crust on top and cut vents/slits in the top crust.
Bake for 1 hour; let cool for 15 minutes.
