Seasonally inspired alternative to bread stuffing. Seasonally inspired alternative to bread stuffing.
Number of Servings: 8


    1 small butternut squash (approx. 1 lb)
    1/2 yellow onion
    1 cup dried cranberries
    1 small granny smith apple diced
    1 cup walnuts chopped
    1 persimmon diced
    3 stalks celery diced
    1/2 tsp ground cumin
    1 tbsp fresh dill
    1 tsp cinnamon
    1 tbsp coconut oil


Can be prepared in advance, will keep for 2 days refrigerated


Preheat oven to 350
Place raw butternut squash in food processor, pulsing until shredded. Put in greased baking dish with all remaining ingredients.
Toss to evenly distribute spices.
Sautee onion in pan until translucent.
Add onion to baking dish
Bake covered 45 min.

Serving Size: Makes 8 1 cup servings
