Ingredients

    2 tbsp Chili powder
    1 tbsp Cumin, ground
    1/2 tsp Cayenne, ground or to taste
    2 cloves Garlic
    2 cup, chopped Onions, raw
    1 cup, chopped Green Peppers (bell peppers)
    1 kg ground beef, extra lean (15% fat) pan broiled
    1 4-oz can Diced Green Chilis
    1 14.5-oz can PC Blue Menu Diced Tomatoes, drained
    1 16-oz cans PC Blue Menu Dark Red Kidney Beans - no salt added
    1 16-oz can PC Blue Menu Red Kidney Beans
    1 12-oz cans PC Blue Menu Peaches & Cream Whole Kernel Corn, no salt added, drained

Directions

1. Brown beef and garlic in a large non-stick skillet over medium heat. Stir to break up meat. Add chili powder and cumin. Stir to combine.

2. Mix tomatoes, beans, corn, chopped onion, chilies, and chopped green pepper in slow cooker. Add beef mixture and mix thoroughly.

3. Cook on high 4-5 hours or on low for 8 to 10 hours.

4. Top each serving with shredded low-fat cheese, if using.

Serving Size: Makes 10 generous servings
