    12 summer squash, 3 to 4 in long, stemmed
    3/4 c olive oil
    1 medium onion, finely chopped
    3 cloves garlic, crushed
    3/4 lb ground beef
    1/2 c rice
    dash salt
    1/2 tsp pepper
    1/2 tsp allspice
    1/4 tsp cinnamon
    1/4 tsp oregano
    1/2 c pine nuts


makes 8 servings

Core squash, don't break skins.

Heat 1/2 c oil and saute squash over medium heat, turning often until they are cooked on all sides. Remove from oil and place on paper towel covered plate to drain and cool.

To oil, add onion and garlic. Saute over medium heat for a few moments. Stir in the rest of the ingredients except pine nuts and stir-fry until meat is brown. Allow to cool.

Heat remaining 1/4 c of oil in another frying pan and add pine nuts, frying over medium heat until they are golden brown. Remove and drain.

Mix pine nuts with meat. Stuff squash, place them in left over oil from pine nuts and simmer uncovered over VERY low heat for 30 minutes, serve hot.
