    1/2 cup coconut flour
    1 scoop Jay Robb Whey protein
    1/2 tbs pumpkin pie spice
    1 tsp baking powder
    4 large eggs
    1/2 cup pumpkin
    1/2 cup half and half
    1/2 cup water
    2 tsp vanilla


I used a two ounce cookie scoop to ensure fairly even pancake size.


Mix all dry ingredients. Whip eggs, pumpkin, half and half, water, and vanilla. Add wet ingredients to dry and mix very well.

Let pancake batter rest for five minutes.

Grease skillet. Use roughly 4 tablespoons of batter per pancake.

Cook each side for about 3 to 4 minutes.

Serving Size: 11 3 to 4 inch pancakes
