Introduction

A healthy, hearty meal in a bowl with a little extra nutrition and protein. Easy to modify to your own tastes. This is my version of Genoese minestrone, with the addition of pesto. Number of Servings: 8

Ingredients

    1 med zucchini
    1 red onion
    garlic cloves (to taste)
    2 carrots
    2 strips celery
    2 cups shredded savoy cabbage
    4 tomatoes
    1 med. potato
    beans- your choice- one tin or 1.5 cups cooked
    pesto-4 tbsp.
    quinoa-44 gm.
    hemp hearts-30 gm.
    olive oil
    chicken broth (or water, or veg. broth)


Tips

Serve with some extra grated parmigiano and a nice chunk of ciabatta and voilà: a meal in a bowl.


Directions

Heat 1 tsp olive oil in a large pot. Chop onions, garlic, celery and carrots. Sauté for about 5min at med heat. Add all other ingredients. Add liquid. Simmer for about an hour.

Serving Size: A big pot of minestrone should feed about 6-8 people.
