A very low calorie soup for the chilly days! A very low calorie soup for the chilly days!
Number of Servings: 10


    1lb frozen broccoli
    1 1/2 C Celery (diced)
    1 C onions Chopped
    2 TBS unsalted butter
    2 TBS flour
    1 C Evaporated Milk
    4 C. Water


Boil Broccoli, Celery, and Onions in large saucepan until veggies are soft. Drain all the water out except 2 cups (this makes up half of your 4 cups that are stated in the ingrediants)

Next, melt the butter in another saucepan, and sprinkle in flour. Stir constantly for 1 minute until it's smooth. Add 2 cups of water and heat to boiling, stirring constantly for 2 minutes. Add seasoning of choice.

If you like a chunkier soup you do not have to process the veggies, but I did, to make it smoother.

Put the veggies you cooked in a food processor and pour them into the butter/flour/ mix. Bring to a boil, and add evaporated milk, and shut off the heat while stirring (do not boil the milk!!)

If the soup is too runny for you, then you can add a little cornstarch in water, and then pour it in th esoup while you stir.
