    1 t. gelatin, unflavored
    2 T. cold tap water
    1 vanilla bean, halved lengthwise and scraped

    2 t. sugar or equivalent substitute
    1/4 C. vanilla soy creamer
    3/4 C. evaporated milk

    1.5 C. strawberries, sliced
    1 T white vinegar, coconut vinegar or white balsamic
    2 t. sweetener or sugar


Recipe originally wanted cream, but this is what I did since I had evap milk and soy creamer on hand. I may try with only soy creamer next time, didn't have enough this time, but it would significantly reduce the fat. Works well with regular half and half cream too.


*Measure tap water into a microwavable 2 C. container
and sprinkle 1 t. gelatin over water to soften the gelatin
*scrape vanilla bean paste into the cup
*microwave 20 seconds to dissolve gelatin
*add sweetener, soy cream, & evap milk and stir to combine, sit at room temp 20 minutes
*portion into 5 ramekins in equal amounts and place in fridge overnight
*before serving, toss berries, vinegar, and sweetener together and use to top panna cottas
