    2 c. Soy Protein Powder
    2 c. Almonds, finely ground
    2 c. Splenda for cooking
    1 T. cinnamon
    1 t. nutmeg
    1 t. salt
    1 t. baking soda
    1 t. baking powder
    1/2 c. grapeseed oil
    2 c. Egg Beaters, egg substitute
    1 1/2 c. Almond Breeze, unsweetened original milk
    3 c. shredded zucchini
    2 t. vanilla extract


In a large bowl mix dry ingredients.

In medium bowl mix wet ingredients. Combine with dry and mix till well combined. Divide batter in 12 muffin cups.

Bake 25-30 minutes or until golden brown. Cool
