Ingredients

    3 small red onions, chopped
    4 cloves garlic, minced
    2 red bell peppers, chopped
    1 chili pepper, minced
    2 Tbsp olive oil
    1 Tbsp ground cumin seeds
    6 cups black beans (canned, or measured after the dried beans have been soaked overnight)
    8 cups hot water
    juice from 1 lime
    1 Tbsp cilantro, chopped

Tips

Goes well with fresh corn tortillas or arepas and topped with chopped, fresh avocado.


Directions

Saute' onions, red peppers, garlic& chili pepper in olive oil until lightly browned. Put in crockpot/slow cooker with cumin, beans and water. Cook on high 3 hours (until beans are soft). Puree the soup, stir in lime juice and cilantro. Enjoy hot.

Serving Size: makes 5 (approx 2-cup) servings
