    3 lbs. butternut squash, cut into 1 inch cubes
    10 oz. spinach, (preferably organic)
    1/2 cup craisins
    1 tbsp finely ground orange zest (or more)
    1 tsp cinnamon (or more)
    1/2 tsp cloves
    1/2 tsp ginger
    1/2 tsp nutmeg


Put butternut squash cubes in a microwave safe bowl.
Cover with spinach and craisins. Sprinkle orange zest and spices over the top and gently mix everything together. Microwave on high 5 min. and then stir. Microwave another 6 minutes or until squash is very soft. Spices and orange zest may be increased or decreased according to your taste.Serving Size: makes 6 1-cup servings Top each serving with walnuts if desired.
