    1 Tbsp olive oil
    1 onion, sliced
    3 garlic cloves,chopped
    2 tsp coriander seed
    1tsp cumin seed
    3 Bell peppers (red,yellow and green)
    seeded and cut into slices.
    5 Black olives,finely sliced
    1 tsp hungarian paprika or dried pepper flakes
    Parsley finely chopped (from small bynch,apx 1 cup)sea salt and pepper to taste.


you can add 4 eggs to this dish as well,just make 4 indentations ,so there is room to crack and cook the eggs in with the tagine.
Abit more spice? add a seeded jalopeno or two.


Heat oil in base of tagine or flame proof baking dish,
or heavy skillet.
Add onion and garlic cumin and coriander seeds, saute'
stirring until onions begin to soften.Toss in the sliced bell peppers and olives, saute' until soft.Season with the salt and pepper.scatter the parsley on top and serve.

Serving Size: makes 4 servings at 1.5 cups
