    1/2 lb. ground hot Italian sausage
    1/2 lb. baby red potatoes, quartered
    1 bell pepper, chopped
    1 onion, chopped
    1 zucchini, chopped
    2 cloves garlic, minced
    2 tbsp extra virgin olive oil
    2 tbsp reduced-fat Parmesan cheese, grated
    1 tsp Italian seasoning
    1/8 tsp ground black pepper


To reduce fat even further, substitute turkey sausage and olive oil spray. This will cut back on both fat and calories!


Preheat oven to 375 degrees. Heat a pan over medium-high heat; brown sausage until cooked completely through. Pour cooked sausage into a large mixing bowl; add remaining ingredients. Stir until mixture is completely combined. Pour contents of bowl into a large baking dish; cover with aluminum foil and bake for 40 minutes or until potatoes are fork tender. Serve warm with garlic bread and salad for a complete meal!
