    3 T. Olive Oil
    1 large onion sliced
    1 lb. carrots, sliced
    8 oz. lentils
    2 tsp. coriander
    2 tsp. cumin
    6 c. chicken broth
    2 c. milk
    salt and pepper to taste


In a large sauce pan, heat olive oil over medium heat until hot. Add onion and carrots; cook and stir 5 min. Add lentils, coriander, and cumin; cook and stir 1 min. Stir in chicken broth; bring to a boil. Cover; reduce heat to low and simmer 30 min. or until lentils and carrots are tender. Cool slightly. Process soup w/ immersion blender until smooth. Stir in milk. Heat through. season to taste w/ salt and pepper.
