    16 oz Frozen precooked shrimp (boiled)
    8oz Fresh mushrooms
    1 package fresh spinach
    juice from 1 lemon
    1 large tomato
    1 medium onion
    4 cloves garlic
    2 tablespoons extra virgin olive oil
    3 tablespoons Promise FAT FREE
    1- 16oz package Linguine


Thaw shrimp under cold running water.
Dice onion and tomatoe.
Prepare Linguine per package directions.
While linguine is cooking mix the following ingredients in a large frying pan on medium heat: Extra Virgin Olive Oil, garlic, and onion. Allow onions to cook down for about 5 minutes, stir often. Add Promise FAT FREE margarine, mushrooms, thawed shrimp, and the juice from one lemon. When the mushrooms are soft, add spinach and put cover pan. Once spinach has wilted add black or red pepper to taste.
Drain linguine in sink and pour linguine into frying pan. Coat with vegetable mixture. Makes 8 servings. Serve with Whole wheat toast and a salad.
