    1 lb Ground beef
    2 10 oz cans Enchilada Sauce
    10" flour tortillas
    1 1/2 cups ceddar cheese
    1 cup Rice
    1 tsp Salt
    1 clove Garlic
    3 TBS Vegetable Oil
    2 cup Chicken Broth
    1/2 cup Tomato Sauce
    1/2 cup Green Peppers (bell peppers)
    1/2 cup Onions chopped


Heat oil in pan on stove. add rice and cook until golden. Add and saute`onion, bell pepper, and garlic. Add salt, tomato, and broth in blender. Add to rice, cook on low heat, until tender and liquid is absorbed. About 20 min. Set aside.
in large skillet, cook beef over medium heat until no longer pink; drain. Stir in rice and 1 1/4 cups enchilada sauce. Spoon beef mixture evenly into tortillas. top with cheese. roll up.
Place in ungreased 9X13in baking dish. Top with remaining enchilada sauce and cheese. Bake uncovered at 350 degrees for 8- 10 min or until cheese melts.

Serve with sour cream, salsa or guacamole! (not counted in calorie count for recipe)
