Introduction

The perfect all around vanilla cake. goes great with any icing. Makes excellent cup cakes. The perfect all around vanilla cake. goes great with any icing. Makes excellent cup cakes.

Ingredients

    2 cups all purpose flour
    cup vegetable oil
    2 cups sugar
    1 teaspoon vanilla
    4 eggs
    1 cup soy milk
    2 teaspoons baking powder

Directions

-Beat sugar and eggs with a wire whisk for about 5 minutes.
-Keep beating on medium speed and add the oil, flour, vanilla, baking powder and soy milk.
-Blend these ingredients until smooth and creamy.
-Bake in tube pan (sprayed with cooking spray) in preheated oven at 350 about 1 hr. until ready.
-this recipe makes 24 cupcakes
