Number of Servings: 8

Ingredients

    2 cups fat free refried beans
    8, 8" flour tortillas
    1 cup white rice
    .75 cup shredded cheddar cheese

Directions

Preheat oven to 350 degrees. Heat refried beans on in microwave. Make 1 cup of rice. Mix refried beans and rice together. Microwave tortillas for 30 seconds to soften. Spray 9" square baking pan with nonstick cooking spray. Spread .25 cup refried beans/rice down center of each tortilla. Sprinkle cheese into each tortilla. Wrap torillas burrito style and place seam side down in pan. Sprinkle .5 cup cheese evenly over burritos. Bake at 350 degrees for 15 minutes. 1 serving=1 burrito

    What a simple recipe. Add a little hot sauce and this recipe is a perfect meal for nights when you don't have a lot of time or motivation to cook. Everyone loves a good burrito. The rice adds a great texture to a classic. I will make this again. Filling can be made ahead of time and taken for work. - 7/14/08

    quick and easy is right. I used leftover rice and added 1Tbsp canned Mexican Corn w/peppers. Topped it with 2Tbsp Salsa and 1Tbsp Greek yogurt. AWESOME! Great for last minute. You can skip the oven for a soft burrito by warming everything in the microwave. - 6/6/14

    LOVE finding easy recipes! Thank you! The only thing I wondered is if the calorie calculation was for .25 cup of cheese PER burrito like the directions mention, or .25 divided by 8 to fill the burritos. Just to be safe, I added calories for another serving of cheese per serving to my diet log. - 6/28/10
