Ingredients

1 pound white beans, soaked
4 medium carrots, sliced
6 medium stalks celery, sliced
1 medium onion, quartered
4 medium tomatoes, peeled and chopped
12 oz package Trader Joe's Soy Chorizo
Salt and pepper to taste (other spices as you wish)
Water to cover ingredients, about 6 cups
Directions
1) Follow the instructions for soaking the beans, whether the overnight or the quick soak method. To quick-soak, rinse the beans and cover with six cups of water. Bring to a boil and cook for two minutes. Remove from heat, cover and let stand for one hour.
2) While the beans are soaking, cut the carrots, celery, and onion. Put them into the crock of you large slow cooker.
3)Add in the soy chorizo.
4) If you are using any additional spices, add them now. I used about a teaspoon of sea salt and about 1/4 black pepper.
5) When the beans are ready, drain and rinse them and add them to the pot. Pour in enough water to cover everything. Give it a stir and cover the pot.
6) Cook on high for at least four hours. Longer wont hurt it.
Serving Size: makes 8 servings, about two cups each including liquid
