    1.5 pound chicken breast, cubed
    1 cup dried black beans, soaked for at least 4 hours, overnight is better.
    1 large onion, chopped (About 2 cups)
    1 can crushed or diced, no-sodium added tomatoes, drained
    1 cup frozen corn kernels
    1 large jalapeno pepper, seeded and diced
    1 tsp cumin
    1 tsp chili power
    1 tsp smoked chipotle pepper powder
    Salt and pepper to taste


Heat pan, add oil, and then cubed chicken. Brown chicken, though it does not need to be cooked through. Add onions and jalapeno. Cook, stirring constantly, for about 2 mins until onions start to become translucent.

Add 2 quarts of low-sodium chicken broth, spices, and black beans. Allow to simmer until beans are almost tender. This will take about 2-3 hours if they have been properly soaked.

When add tomatoes and corn near the end.

Serving Size: Makes 6 roughly 2 cup servings
