    6 eggs
    2 cups cooked quinoa
    6 slices Canadian bacon
    4 oz of Cabot 75% reduced fat cheddar, shredded

    1 container of trader joes diced onions, garlic, and shallots (approx 1c mix)
    1 bag (8 cups) baby spinach
    0.5 T olive oil
    Seasoning for taste


In a large bowl, mix quinoa, eggs, Canadian bacon, and cheese.

Sautée onion mixture with the oil, add spinach and cook until spinach wilts, season to taste
add into the egg mixture when cooked

Distribute the egg mixture into a jumbo muffin tin (6 muffins)

Bake 20-25 minutes at 350 until eggs are set

Can be reheated for breakfast all week

Serving Size: Makes 6 jumbo muffins
