Spicy Vegetable Chicken Soup with Alphabet Pasta Spicy Vegetable Chicken Soup with Alphabet Pasta
Number of Servings: 12


    4 chicken thighs
    3 tbs. chicken bouillon granules (more or less to taste)
    12 cups water (more or less to taste)
    1 (7 oz.) pkg. dried alphabet pasta
    1 Tbs Olive Oil
    2 cans tomato & green chile
    2 large carrots
    3 large celery stalks
    3 small-medium zucchini
    1 cup frozen peas


We like this soup 'brothy', so add water & bouillon to taste as it cooks. The pasta absorbs a lot of the broth. This fills our largest soup/stock pot= 24 cups.


Cook chicken thighs in stock (made w bouillon), then discard skin, fat & bones. Skim fat off stock, shred chicken and return to stock. Add both cans of tomato & green chile. Brown uncooked pasta in a little olive oil, add to soup. Chop all veggies as desired and add to soup. Cook on low heat until veggies are done and pasta is tender. Add peas. Ready to eat when peas are heated through.
